Vegan Chorizo With Seitan, Mushrooms, & Walnuts

This recipe is a must try simply because of how flavorful the chorizo is! You practically forget you’re not eating the real thing lol.

No but seriously, the combination of seitan, mushrooms, and walnuts creates a very believable meat crumble. The addition of onion, garlic, and jalapeno creates a tone of freshness and the long list of spices brings the whole mixture to life. Apple cider vinegar creates a slight caramelization on the crumble.

This chorizo can be made ahead of time for different types of meals such as quesadillas, tacos, tostadas, burritos, nachos, and so so so much more!

A healthier option that has the same great flavors!


  • 1 seitan cutlet
  • 1 cup portabello mushrooms
  • 1/4 cup walnuts
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 jalapeño, chopped
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp allspice
  • 1/2 tsp corinader
  • 1/8 tsp cloves
  • 1/8 tsp cinnamon
  • 1/8 tsp cumin
  • 1 tbsp apple cider vinegar, or white vinegar
  • salt and pepper to taste


  1. Chop the seitan, portabello mushrooms, and walnuts in a food processor.
  2. Combine all other ingredients and cook on an oiled pan on medium heat until the crumble is crispy.
