- Mix well and taste for salt and pepper. Cover and refrigerate for at least one hour, or until ready to serve. The longer it stays in the fridge, the more the flavors will meld together.

Some tips I have for you are to make sure not to burn your onions while sauteing them, they should be translucent not brown in any way. Also, only cook you potatoes and carrots until they are soft, they should not be mushy or falling apart. Adding the tablespoon of vinegar helps with this.
