In the spirit of National Eat All Your Veggies Day (June 17th!), here are some ideas to use up those leftover veggies that you may have in your fridge. The variations for these dishes are minimally restrictive. For all of the recipes in this list, regardless of the specific vegetables that the recipes may call for, just throw in the veggies that you already have and enjoy!
Stir Fry
Stir fries are one of my favorite ways to use up veggies. Onions, green onions, carrots, mushrooms, zucchini, peas, cabbage, bell peppers, and many more can all be incorporated into stir fries. There are many varieties of stir fries but they are all fast and easy to make. Once you have your stir fried veggies, combine them with noodles, rice, potatoes, or anything else. The key to any delicious stir fry is using plenty of colorful and vibrant veggies!

Egg-Based: Quiches, Frittatas, and Omelets
Egg-based dishes are one of the most popular breakfast and brunch dishes. Not only are they all quick to make but adding any sort of vegetable adds a variety of textures, flavors, and provides delicious forms of nutrients to get the day started.

Roasted Vegetables
Roasting veggies brings out their sweet flavors that other forms of cooking can’t do. Simply chop up any veggies you have, throw them in the oven, and you have a great dinner! Roasted veggies can be paired with various forms of rice, noodles, potatoes, or enjoyed on their own straight from the baking tray. A recent trend has been to throw roasted veggies into the blender for a home-made pasta sauce!

Soups
Soups are another great way to incorporate many veggies. Veggies can be enjoyed as chunks in a rich broth or pureed to create a creamy soup if there is a large number of veggies you’d like to use up before they go bad. Soups also use up vegetable scraps to make a flavorful broth.
