S’mores chocolate chip cookies are the summers hot new trend. S’mores are a fan favorite for everyone, especially during those breezy summer nights by the campfire. This summer, we’re putting the traditional s’mores aside and opting for these delicious, jumbo s’mores cookies.
These larger than normal cookies are essentially a s’more, omitting the chocolate, topped with a big chunk of cookie dough and baked until golden brown. These s’mores cookies have a graham cracker bottom that gets oh so soft after being baked and melded into the cookie dough.

What makes these cookies jumbo?
These jumbo stuffed cookies are each filled with 1 whole graham cracker and 1 large sized marshmallow. If you’re looking for even more jumbo, opt for a jumbo size marshmallow and double the graham cracker. Be warned, you may only fit 1 cookie on your baking sheet!
My jumbo cookies were so big, only 4 fit on my baking sheet. I am typically able to fit 8-12 cookies, so I knew I had to categorize these as jumbo! What you need to make jumbo s’mores cookies
- Marshmallows. Large sized is the best option, but you can combine 3 mini marshmallows if that’s all you have on hand.
- Graham crackers. Honey flavor is my favorite, but cinnamon works well too if you’re looking for some extra spice!
- Cookie dough. I buy the Lidl brand, and I think it is the tastiest store brought cookie dough I have ever tried. If you don’t want to use store brought cookie dough, you can make your own cookie dough using my chocolate chip cookie recipe.
How to make jumbo s’mores cookies
- Place a marshmallow atop half a sheet of graham cracker.
- Cover the top with 1/4 cup of cookie dough until it is tight and compact. It’s not necessary to cover the bottom of the graham cracker with cookie dough, just cover the marshmallow and the top of the graham cracker. To see my technique, scroll below the recipe to find my full video!
- Bake the cookies as directed in the packaging, or until golden brown and the marshmallow is melted.
- Let cool at room temperature for 10-15 minutes, and enjoy!
