Then blend the tofu, bananas, coconut milk, lemon zest, powdered sugar, lemon extract, and remaining lemon juice until smooth.

Once ready, blend your banana mixture with the frozen blueberry mix, creating a gentle swirl. Divide the final mix into four servings, topping each bowl with a handful of fresh blueberries.   • 1 cup blueberries frozen
  • 2 tsp lemon zest
  • ½ cup lemon juice
  • 16 ounces silken tofu frozen, drained, and cut into 1-inch cubes
  • 2 ripe bananas frozen, peeled, cut into thirds
  • ½ cup unsweetened coconut milk
  • 2 tbsp powdered sugar
  • 1 tsp lemon extract


  • Combine the frozen blueberries, 3 tablespoons of lemon juice, and 3 tablespoons of cold water in a blender and blend until you get a smooth mixture.
  • Once done, transfer this mix to a bowl and let it rest in the freezer for about 10 minutes.
  • In the meantime, place tofu, bananas, coconut milk, lemon zest, powdered sugar, lemon extract, and the remaining lemon juice into the blender. Blend these ingredients until a smooth texture is obtained.
  • Now, gently stir the banana blend into the frozen blueberry mix, creating a swirl effect.
  • Fill a piping bag with a star-shaped nozzle, with the banana blend and pipe it into your bowls for that classic Dole Whip appeal.
