Every comforting Dominican dish needs a crunchy, refreshing side like a green salad. Dominican salads always have cabbage or lettuce, and a true ensalada verde has cucumbers, tomatoes, red onions, and beets.

This combo is colorful and has a little bit of everything, kinda like other Dominican salad recipes like ensalada rusa and ensalada de coditos. I love topping it with a classic ACV dressing and a generous sprinkle of salt and pepper.

My favorite salad dressing

I combine apple cider vinegar with equal parts olive oil to make a easy and simple dressing that’s tangy and delicious. I also love using fresh lemon juice in it’s place for a fresh zest, or even white distilled vinegar for a similarly delicious tang.

Make it extra special with a couple slices of avocado

Adding avocado to the ensalada adds some healthy fats and irresistible creaminess. I either add the avocado in thin slices or I chop the avocado into pieces and toss it into the mix.

Ingredients
  

Ensalada Verde

  • ½ head cabbage finely chopped, or 1 head lettuce, chopped
  • 1 tomato sliced
  • 1 beet cooked, sliced
  • 1 cucumber sliced
  • ¼ red onion sliced
  • 1 avocado sliced (optional)

Dominican Salad Dressing

  • 3 tbsp apple cider vinegar or lemon juice
  • ¼ cup olive oil
  • Salt to taste
  • Pepper to taste

Instructions
 

Ensalada Verde

  • In a large bowl or plate, add cabbage as base and top with tomato, beet cucumber, onion, and avocado slices.

Dominican Salad Dressing

  • In a small bowl, combine apple cider vinegar, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss gently. Buen provecho!
