I have so many memories of eating huevos con salchicha as a kid. My mom only made it for special occasions, and it was always a hit, especially when served with warm chocolate con leche.

If you’ve never had this before, it’s pretty much an egg and hot dog scramble. You cook the hot dogs until they’re a little crispy, then you add the eggs and scramble until they’re soft and fluffy.

You can also use vienna sausage

If you don’t have hot dogs on hand, then you can make this same exact recipe with a can of vienna sausage. Slice and cook the sausage just as you would do with the hotdog, and you’ll have have a delicious alternative!

Cook the hot dog slices until crispy

I love to cook the hot dog slices until they’re a bit darker and crispy, I just think it adds some more texture and flavor to the scramble. But you can cook them for as long as you’d like.

If you don’t want them as crispy, then just cook them for only 1-2 minutes before adding the eggs.

Whisk the eggs well

Whisking the eggs well is key to making huevos con salchicha. Whisk for 30-60 seconds, or until the yolk and the whites of the egg are completely combined.

Serve with toast or a tortilla

I always grew up eating this with a slice of bread, but I’ve seen many eat this with a warm tortilla. Making this into a sandwich or taco is also such a good idea!

Huevos con salchicha is a flavorful twist on scrambled eggs made with crispy hot dogs.

  • 1 hot dog
  • 2 eggs
  • ¼ tsp salt
  • 1 tsp butter


  • Cut the hot dogs into ¼-½ inch slices.
  • Combine the eggs and salt in a bowl and whisk until well combined.
  • In a pan over low to medium heat, add butter and hot dog slices. Cook until the hot dog is crispy, or about 4 minutes.
  • Pour the eggs in the pan and use a spoon to scramble the eggs and hot dogs until the eggs are cooked but still soft. Serve and enjoy. Buen provecho!
